This was amazing for my lunch yesterday and today.

👌Fry a 1 tbsp of massaman curry paste with a little coconut oil.
👌mushrooms 👌chopped/shredded veggies of your choice 👌a knob of grated ginger and two garlic cloves. 👌stir through and simmer for a few minutes. 👌brown rice noodles 👌cashew nuts 👌one tin of coconut milk 👌a large splash of tamari sauce 👌a large splash of vegan fish sauce 👌a squeeze half a lime 👌tbsp of dried coriander 😋Enjoy!
