Asparagus, New Potatoes and Egg Salad

Big Day today, full diary so need some energy for the day!  Fancy a healthy yet filling lunch.

  • Griddle some Asparagus and new potatoes (gently steam potatoes first) add salt and pepper
  • Boil an egg – 5-6 mins
  • Romaine lettuce and green olives – olive oil and lime for dressing (pepper)

Potatoes, egg, olive oil and olives will give me that energy to get through the day 🙂

Asparagus is great for the kidneys. It’s a natural diuretic: It contains high levels of the amino acid asparagine, which serves as a natural diuretic, and increased urination not only releases fluid but helps rid the body of excess salts.
