Sweet Potato and Houmous!

Dave Lewis from Bristol Boot Camp with some good ideas for our healthy and nutrition sweet potato! (See further down the page)

Sweet Potato wedges are also delicious with homemade houmous.  Takes 2 seconds to make!

 Serves 6-8 as a starter
  • 2 x 400g cans of chickpeas (reserve the liquid and a few chickpeas for decoration)
  • 4 tsp tahini
  • 2 garlic cloves, crushed
  • 1 tsp crushed sea salt
  • 6 tbsp quality extra virgin olive oil (plus extra for drizzling)
  • 3½ tbsp freshly squeezed lemon juice
  • Paprika (optional)
  • Coriander or parsley leaves (optional)

The Humble Sweet Potato…

These vegetables are packed full of anti oxidants, fibre and vitamins.

They are as versatile as the normal white potato when it comes to cooking but in my opinion tastier.

Have you tried Sweet Potato Wedges roasted in the oven with a little oil, some seasoning and smoked paprika sprinkled on top? DELICIOUS!! Why not have some with a homemade burger? Oh and don’t peel them, keep the skin on! It makes such a difference to the taste and texture.

This is a good carb so don’t shy away from it.
