Using leftovers is a great way to save time! 

I used roasted beetroot from my evening meal and added this to my salad for lunch.

*roasted beetroot in Cajun spice
*walnuts
*apple
*blue cheese from Christmas 
*romaine lettuce 
*salt,pepper, olive oil and squeeze lemon!
