This was delicious, so tasty and no time to make. A good way to remove all animals products from the meal and give the body some wholesome goodness.
I love making stew/soup like dishes because they are easy and packed full of nutrients; due to cooking them slowly, and keeping all of the liquids in from the vegetables, spices etc…
You can make these style dishes the night before, off to work and then come home and gently warm them through; no effort, more time to relax.
Having a soup of stew at night is easier on your digestion; especially if meat free, and not too bulky. Eat lighter at night so your body has time to rest and repair whilst you sleep.
