Line a muffin tray with a little ham, slice some spinach or whatever veggies you like – red onion is nice & peppers 😊. Crack an egg in the middle & bake in the oven for 15-20 mins on gas mark 5 or 6 (may vary depending on how you like your yolk!).

Perfect breakfast or lunch to eat straight out the oven or have cold – you can even cook them the night before & take with you in the morning if you don’t have time to make fresh. No excuse to not have a good brekkie 😊 Jem x
