This is definitely a favourite of mine. You can have it for breakfast, as a snack, lunch at work; its fantastic and very filling.
Chia seeds are so good for you! Full of protein and fat, so this snack will keep you fuller for longer. Coupled with all the other benefits; its one healthy dish!
To make my chia seed pudding you’ll need:
- 2 ripe bananas chopped
- 5 tbsp of chia seeds
- 1-2 tbsp of cocoa powder
- 1-2 tbsp of honey
- mix altogether
- then add 1 tin of coconut milk, full fat
- stir till all mixed in
- leave over night in the fridge to set! It should be slightly firm like chocolate mousse, if it isn’t, then add more seeds.
