🍅Organic fermented tofu is always a good substitute from meat and is filling.

🍅Miso gives a great flavour and tofu is good at absorbing flavours so can taste delicious, depending on your sauce.

🍅Smoked tofu chopped into squares and gently fried in organic butter, garlic, miso, thyme.
🍅Then add tin tomatoes, vegetables of your choice, with salt and pepper, cook gently till soft.
🍅Add some steamed chard and Cavolo nero to finish the dish

Vegan curry noodle soup!!!

This was amazing for my lunch yesterday and today.

👌Fry a 1 tbsp of massaman curry paste with a little coconut oil.
👌mushrooms 👌chopped/shredded veggies of your choice 👌a knob of grated ginger and two garlic cloves. 👌stir through and simmer for a few minutes. 👌brown rice noodles 👌cashew nuts 👌one tin of coconut milk 👌a large splash of tamari sauce 👌a large splash of vegan fish sauce 👌a squeeze half a lime 👌tbsp of dried coriander 😋Enjoy!

 

Homemade Granola

Buying granola from the supermarket can mean you are taking in more added sugars than necessary, so why not try and make your own granola?

Prepare:

4 cups of organic rolled oats
1 cup of nuts, your choice
¼ teaspoon cinnamon
¼ teaspoon ground ginger
½ cup melted coconut oil
½ cup honey or maple syrup
¾ teaspoon vanilla
1 cup of chopped dried apricots and chopped dried cherries or cranberries

Mix altogether and bake in the oven on 180 for 30 minutes till crunchy!
