Warm rice salad with crayfish (serves two, estimated cooking and preparation time 30 minutes:
- X1 red onion
- X 1 red pepper
- X1 small courgette
- Organic basmati rice
- Handful of rocket (washed)
- Handful of crayfish
- Sea salt (optional)
- X2 small cloves of garlic (optional)
- Olive oil or rapeseed oil
Cooking instructions:
- Soak the rice overnight
- Dice the red onion
- Wash and slice the red onions into bite-size pieces
- Bring rice to the boil, once boiling simmer (in accordance with cooking instructions), add sea salt if required
- Heat the oil in a pan
- Lightly fry the onions (add garlic if using) until soft
- Add peppers and courgettes (add sea salt if using)
- Once the rice is cooked, drain, rinse and add to the pan, mix well
- Plan the chosen amount on the serving dish, add the rocket and crayfish
- Serve with tamari (wheat free soya sauce)
