Warm rice salad with crayfish

Warm rice salad with crayfish (serves two, estimated cooking and preparation time 30 minutes:

  • X1 red onion
  • X 1 red pepper
  • X1 small courgette
  • Organic basmati rice
  • Handful of rocket (washed)
  • Handful of crayfish
  • Sea salt (optional)
  • X2 small cloves of garlic (optional)
  • Olive oil or rapeseed oil

Cooking instructions:

  1. Soak the rice overnight
  2. Dice the red onion
  3. Wash and slice the red onions into bite-size pieces
  4. Bring rice to the boil, once boiling simmer (in accordance with cooking instructions), add sea salt if required
  5. Heat the oil in a pan
  6. Lightly fry the onions (add garlic if using) until soft
  7. Add peppers and courgettes (add sea salt if using)
  8. Once the rice is cooked, drain, rinse and add to the pan, mix well
  9. Plan the chosen amount on the serving dish, add the rocket and crayfish
  10. Serve with tamari (wheat free soya sauce)
