Asian Broth with Salad

I’m loving broths at the moment.  A nice broth and salad for lunch is a tasty and healthy treat.

Broth – Gently fry in coconut oil some spring onions, ginger, miso, garlic, chilli, salt and pepper.  Then add thinly chopped tomatoes and celery. Add water to cover mixture.  Lots of lemon grass and lime.  Add rice noodles (optional) and pak choi then simmer for a while.  Add more spices or flavours to suit your taste.

If you can leave this dish off the heat all night even better. Finish off after gently warming with coriander upon serving.

Salad – Romaine lettuce, sun dried tomatoes, beetroot – finish off with olive oil, apple cider vinegar and lemon.
